Did you ever make a dish with fairly low expectations only to have your socks knocked off by the delicious combination of flavors? This is a moroccan inspired dish prepared with ground meat (lamb or beef) tomatoes, an interesting blend of paprika, cumin, cinnamon, parsley and cilantro and them topped off with an egg. At first glance, the recipe honestly sounded a bit odd to me, but after giving it a go the family was smitten and declared it a definite winner.
Don’t be scared off by the odd sounding ingredient list! This comes together to be an amazing one skillet dish loved by all ages.
Print Amazing Tomato Sauce with Eggs {Kefta Meat Sauce and Egg}
Ingredients
TOMATO SAUCE 2 lbs. fresh, ripe tomatoes or substitute organic canned tomatoes 1 onion, chopped 1 1/2 teaspoons paprika 1 1/2 teaspoons cumin 1 1/2 teaspoons salt 1/8 teaspoon ground hot pepper 3 tablespoons fresh parsley, chopped (or sub in scant tablespoon of dried herbs) 3 tablespoons fresh cilantro, chopped 3 cloves garlic,finely diced 1/3 cup olive oil MEAT MIXTURE 1 lb. ground beef or lamb (or a combination of the two) 2 teaspoons paprika 1 teaspoon cumin 1 teaspoon salt 1/2 teaspoon ground cinnamon 1/4 teaspoon pepper 1/4 teaspoon hot paprika (or 1/8 teaspoon ground hot pepper) 1/4 cup chopped fresh parsley 1/4 cup chopped fresh coriander (cilantro) --------------- 3-4 eggsInstructions
If using fresh tomatoes, peel and cut up. Combine tomatoes through olive oil in a skillet and cook over medium heat until simmering. Cover and reduce heat to medium low to keep a gentle simmer. Continue to simmer for 15 or 20 minutes. Add in the remaining ingredients (except for the eggs) and continue to simmer, covered, for another 30-40 minutes. If the sauce gets too thick, add a bit of broth or water to thin to taste. About 10 minutes before you're ready to eat, break the eggs on top of the meat sauce and cover. Cook until desired doneness for eggs is reached. It will probably be about 7-10 minutes.Recipe from About
